Recipe for Šurlice

INGREDIENTS (for 10 servings):

1 kg of sharp flour

500 ml of water

1 egg

1 egg yolk

10 g of salt

1 tablespoon of olive oil



1.Knead a firm dough from flour, water, egg, egg yolk, salt and olive oil. Let it stand for 1-2 hours.

2.On a floured surface, shape the pieces of dough into a roll and cut them into smaller pieces.

3.Thin each piece in the palm of your hand, then wrap it around a floured stick and use your hands to form hollow spaghetti.

4.Place the shaped dough on a floured surface and let it rest for several hours.

5.Boil the šurlica prepared in this way in a large amount of salted water.


SERVING: serve boiled šurlica immediately after cooking with sauce of your choice.

On the island of Krk, they are traditionally served with goulash.
