INGREDIENTS:
500 g of white wheat flour type 500
340 ml of warm water
1 bag of dry yeast
2 teaspoons of salt
2 teaspoons of sugar
1 tablespoon of olive oil
PREPARATION OF YEAST:
The first step in the preparation of bread is yeast.
Shake a bag of dry yeast in 340 ml of warm water and add two teaspoons of sugar.
Let the yeast rise for 10 minutes. If foam forms on the yeast, the fungi are lively and ready to work
MIXING THE DOUGH
1. Sift 500 g of flour into a large bowl and make an indentation in the middle with your hand. Be sure to sift the flour to get a nicer and airier texture of the bread itself.
2. Add salt, a spoonful of oil and yeast to the flour.
3. Mix all the ingredients with a food processor to make a dough.
4. Then knead the dough in a bowl to collect all the flour, then transfer it to a floured board.
5. Knead the dough for another 5-10 minutes by grasping the top with your fist and pushing it away from you and down with your wrist.
6. The dough is ready when it is smooth and does not stick to the surface or to your fingers.
7. Return the mixed dough to the bowl and cover it with a cloth.
8. It’s time for the first lift, which lasts 1.5-2 hours. During rising, the dough must double in size. Leave the dough in a warm place without the presence of drafts.
Prepare the oven, heat it to 220° for at least 45 minutes.
SECOND MIXING:
1. Shake the dough out of the bowl onto a surface covered with flour. At the same time, peel it off the walls with the palm of your hand.
2. During the second mixing, simply grab the upper part of the dough that is facing away from you and pull it towards you and fold it. Repeat the procedure on the left and right sides, and finally on the bottom.
3. Turn the bread over and sprinkle it with a little flour, then place it in a bowl with the nice smooth side facing down.
4. Cover it with the ends of the cloth and let it rise for another 30-45 minutes.
DURING THE SECOND RISE IN THE OVEN, HEAT THE CONTAINER IN WHICH YOU WANT TO BAKE THE BREAD
BAKE BREAD:
1. Remove the heated pan from the oven.
2. Turn the bread with light movements, place it in a baking dish and carve the desired shape with a sharp knife.
3. Immediately cover the dough and put it in the oven heated to 220 °C.
4. After 15 minutes of baking, remove the lid and reduce the temperature to 200 °C.
5. After another 25 minutes, the bread is baked.
